For the Pastry:

  • 2½ cups all-purpose flour

  • 1 cup granulated sugar

  • ½ cup ground almonds

  • 1 cup cold unsalted butter, cubed

  • 1 large egg

  • ½ teaspoon baking powder

For the Filling:

  • 16 ounces cream cheese, softened

  • 2 large eggs

  • 1 cup granulated sugar

  • 2 teaspoons vanilla extract

  • ½ cup fresh or frozen raspberries

For the Topping:

  • ¼ cup ground almonds


Instructions

 

  1. Prepare the Pastry:

    • In a food processor, combine flour, ground almonds, sugar, baking powder, and cold cubed butter. Pulse until the mixture resembles fine breadcrumbs.

    • Add the egg and pulse just until the dough forms. It will be soft.

    • Divide the dough: wrap one-third in plastic wrap and place in the freezer; wrap the rest and refrigerate for 30 minutes.

  2. Prepare the Filling:

    • In a large bowl, beat the cream cheese, eggs, sugar, and vanilla extract until smooth.

  3. Assemble the Bars:

    • Preheat your oven to 350°F.

    • On a floured surface, roll out the chilled dough to fit a 9×13-inch baking dish. Press it into the bottom and slightly up the sides.

    • Pour the cream cheese filling over the crust and spread evenly.

    • Scatter the raspberries over the top.

  4. Add the Topping:

    • Grate the frozen dough using a box grater.

    • Mix the grated dough with the ground almonds.

    • Sprinkle evenly over the raspberry layer.

  5. Bake:

    • Bake in the preheated oven for about 40 minutes or until the top is golden brown.

  6. Cool and Serve:

    • Let the bars cool completely in the pan for at least 3 hours, or refrigerate overnight for cleaner slices.

    • Cut into bars and enjoy!
