1 English cucumber, sliced

1 tablespoon fresh herbs (parsley, basil, or dill), optional

1 tablespoon red wine vinegar

Salt and black pepper to taste
Instructions

In a large bowl, combine the sliced cucumber, diced tomatoes, and thinly sliced red onion.

If using, add the chopped fresh herbs to the bowl.

Drizzle the olive oil and red wine vinegar over the vegetables.

Season with salt and black pepper to taste.

Toss all the ingredients together until well combined.
