Cucumber Tomato Salad: A Refreshing Classic for Every Season

Ingredients

  • 1 English cucumber, sliced

  • 2 to 3 large ripe tomatoes, diced

  • ½ medium red onion, thinly sliced

  • 1 tablespoon fresh herbs (parsley, basil, or dill), optional

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • Salt and black pepper to taste


Instructions

 

  1. In a large bowl, combine the sliced cucumber, diced tomatoes, and thinly sliced red onion.

  2. If using, add the chopped fresh herbs to the bowl.

  3. Drizzle the olive oil and red wine vinegar over the vegetables.

  4. Season with salt and black pepper to taste.

  5. Toss all the ingredients together until well combined.

  6. Cover the bowl and refrigerate the salad for at least 20 minutes before serving to allow the flavors to meld.
