Preheat Oven:
Set your oven to 400°F. -
Prepare Potatoes:
In a large bowl, combine the potato wedges with olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Toss until the potatoes are evenly coated. -
Arrange on Baking Sheet:
Spread the seasoned potatoes in a single layer on a baking sheet, ensuring they are not overcrowded to allow for even roasting. -
Roast Potatoes:
Place the baking sheet in the preheated oven and roast for 40–45 minutes, turning the potatoes halfway through, until they are golden brown and crispy on the edges. -
Add Feta:
Once the potatoes are roasted, remove them from the oven and immediately sprinkle the crumbled feta cheese over the hot potatoes. The heat will slightly melt the feta, enhancing the flavor. -
Garnish and Serve:
If desired, garnish with chopped fresh parsley before serving. Serve warm as a side dish to your favorite main course.
