Ingredients
For the Potato Mixture:

2 cups chilled mashed potatoes

1 cup shredded mozzarella or cheddar cheese

½ cup grated Parmesan cheese

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste
For Coating:

1 egg, beaten

1 cup breadcrumbs (panko or regular)

Cooking spray or a little olive oil
Instructions

Combine Ingredients: In a large bowl, mix the mashed potatoes, shredded cheese, Parmesan, garlic powder, onion powder, salt, and pepper until combined.

Form Balls: Scoop 1 to 1½ tablespoons of the mixture and roll into balls. Makes about 18–20 balls.

Prepare Coating: Dip each ball into the beaten egg, then roll in breadcrumbs to coat.

Preheat Air Fryer: Set your air fryer to 375°F and let it preheat for 3–5 minutes.

Cook: Lightly spray or brush the air fryer basket with oil. Place the balls in a single layer, not touching. Spray the tops lightly with oil. Air fry for 10–12 minutes, shaking halfway, until golden and crispy.

Serve: Let cool slightly before serving. Enjoy as a snack, appetizer, or side.
