Cracker Barrel-Inspired Meatloaf – A Classic, Cheesy, and Juicy Recipe

  • 2 eggs

  • 2/3 cup milk

  • 32 Ritz crackers, crushed

  • 1/2 cup chopped onion

  • 4 ounces shredded sharp cheddar cheese

  • 1 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 1/2 pounds ground beef

For the Topping:

  • 1/2 cup ketchup

  • 1/2 cup brown sugar

  • 1 teaspoon mustard


Instructions

  • Prepare the Meatloaf Mixture:

    • Preheat your oven to 350°F (175°C).

    • In a large mixing bowl, beat the eggs. Add the milk and crushed Ritz crackers, stirring until well combined.

    • Mix in the chopped onion and shredded cheddar cheese.

    • Add the ground beef, salt, and black pepper to the bowl. Mix gently until all ingredients are evenly incorporated. Avoid overmixing to keep the meatloaf tender.

  • Shape and Bake:

    • Shape the meat mixture into a loaf and place it on a baking sheet lined with aluminum foil for easy cleanup.

    • Bake in the preheated oven for 45 minutes.

  • Prepare the Topping:

    • While the meatloaf is baking, combine the ketchup, brown sugar, and mustard in a small bowl, mixing until smooth.

  • Glaze and Continue Baking:

    • After the initial 45 minutes of baking, remove the meatloaf from the oven. Spread half of the prepared topping evenly over the top of the meatloaf.

    • Return the meatloaf to the oven and bake for an additional 10 minutes.

    • After 10 minutes, apply the remaining topping and bake for another 5-10 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).

 

  • Rest and Serve:

    • Once done, remove the meatloaf from the oven and let it rest for about 10 minutes. This allows the juices to redistribute, making for a moister meatloaf.

    • Slice and serve warm.
