Ingredients
-
2 eggs
-
2/3 cup milk
-
32 Ritz crackers, crushed
-
1/2 cup chopped onion
-
4 ounces shredded sharp cheddar cheese
-
1 teaspoon salt
-
1/4 teaspoon black pepper
-
1 1/2 pounds ground beef
For the Topping:
-
1/2 cup ketchup
-
1/2 cup brown sugar
-
1 teaspoon mustard
Instructions
-
Prepare the Meatloaf Mixture:
-
Preheat your oven to 350°F (175°C).
-
In a large mixing bowl, beat the eggs. Add the milk and crushed Ritz crackers, stirring until well combined.
-
Mix in the chopped onion and shredded cheddar cheese.
-
Add the ground beef, salt, and black pepper to the bowl. Mix gently until all ingredients are evenly incorporated. Avoid overmixing to keep the meatloaf tender.
-
-
Shape and Bake:
-
Shape the meat mixture into a loaf and place it on a baking sheet lined with aluminum foil for easy cleanup.
-
Bake in the preheated oven for 45 minutes.
-
-
Prepare the Topping:
-
While the meatloaf is baking, combine the ketchup, brown sugar, and mustard in a small bowl, mixing until smooth.
-
-
Glaze and Continue Baking:
-
After the initial 45 minutes of baking, remove the meatloaf from the oven. Spread half of the prepared topping evenly over the top of the meatloaf.
-
Return the meatloaf to the oven and bake for an additional 10 minutes.
-
After 10 minutes, apply the remaining topping and bake for another 5-10 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
-
-
Rest and Serve:
-
Once done, remove the meatloaf from the oven and let it rest for about 10 minutes. This allows the juices to redistribute, making for a moister meatloaf.
-
Slice and serve warm.
