Coconut Lime Chicken Skewers: A Grilled Summer Favorite Bursting with Tropical Flavor

  • 1.5 lbs Chicken Breast, cut into 1-inch cubes

  • 1/2 cup Coconut Milk

  • 2 tablespoons Lime Juice

  • 1 tablespoon Olive Oil

  • 2 Garlic Cloves, minced

  • 1 teaspoon Honey

  • 1/2 teaspoon Ground Cumin

  • Salt and Pepper to taste

  • Wooden or metal skewers


Instructions

 

  1. In a bowl, whisk together coconut milk, lime juice, olive oil, garlic, honey, cumin, salt, and pepper.

  2. Add chicken pieces to the marinade, mix well, cover, and refrigerate for at least 1 hour.

  3. Preheat grill to medium-high heat.

  4. Thread marinated chicken onto skewers.

  5. Grill skewers for 4–5 minutes on each side until chicken is cooked through and slightly charred.

  6. Serve hot with extra lime wedges!
