5 large eggs

1 cup self-rising flour

4 medium zucchinis (about 375g), grated

1 large onion, finely chopped

4 slices turkey bacon, chopped

1 cup grated cheddar cheese

¼ cup vegetable oil

Salt and pepper to taste
Instructions

Preheat Oven:
Set your oven to 350°F (180°C).
Grease and line a 12×8-inch baking dish with parchment paper. -
Prepare Zucchini:
Grate the zucchinis and place them in a colander.
Sprinkle with a little salt and let sit for 10 minutes.
Using a clean cloth or your hands, squeeze out the excess moisture. -
Mix Ingredients:
In a large bowl, beat the eggs until combined.
Add the self-rising flour and mix until smooth.
Stir in grated zucchini, chopped onion, turkey bacon, cheddar cheese, and vegetable oil.
Season with salt and pepper. -
Bake:
Pour the mixture into the prepared dish and spread evenly.
Bake for 30–40 minutes, or until golden and a toothpick inserted in the center comes out clean. -
Cool and Serve:
Let cool in the pan for 10 minutes.
Cut into squares and serve warm or at room temperature.
