2½ cups cooked green lentils

1 cup finely chopped carrots

1 cup finely chopped onion

3 cloves garlic, minced

½ cup chopped walnuts

½ cup sunflower seeds

1 cup breadcrumbs (whole grain or gluten-free)

½ cup flour (such as chickpea flour)

2 eggs or 2 flax eggs (see note)

2 tablespoons tomato paste

2 tablespoons vegan Worcestershire sauce

1 tablespoon fresh or dried thyme

1 tablespoon fresh or dried oregano

1 teaspoon fine sea salt

Instructions
1️⃣ In a food processor, pulse the lentils until partially mashed. Transfer to a large mixing bowl.
2️⃣ Add the chopped carrots, onion, garlic, walnuts, sunflower seeds, breadcrumbs, flour, thyme, oregano, and salt to the bowl. Mix well to combine.
3️⃣ In a separate bowl, whisk together the eggs (or flax eggs), tomato paste, and vegan Worcestershire sauce.
4️⃣ Pour the wet mixture into the lentil mixture and stir until everything is well incorporated and the mixture holds together.
5️⃣ Form the mixture into 8–10 patties, depending on your preferred size.
6️⃣ Heat a skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 5–7 minutes on each side, or until golden brown and heated through.
7️⃣ Serve the lentil burgers on buns with your favorite toppings such as lettuce, tomato, red onion, pickles, and condiments.
