1 lb turkey bacon

2 ½ cups dried apricots

½ small fresh pineapple, cut into bite-sized chunks

2 tbsp honey

2 tbsp soy sauce

½ cup packed brown sugar

1 package (about 8 oz) baked cheese (such as bread cheese or Brun-uusto), cut into cubes

1 cup blue cheese crumbles

Preheat Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Glaze: In a small bowl, mix together the honey, soy sauce, and brown sugar until well combined. Set aside.

Assemble the Bites: Take a piece of dried apricot, a chunk of pineapple, and a cube of baked cheese. Stack them together. Wrap a slice of turkey bacon around the stack and secure with a toothpick. Repeat until all ingredients are used.

Glaze the Bites: Place the assembled bites on the prepared baking sheet. Brush each bite generously with the honey-soy glaze.

Bake: Bake in the preheated oven for 20-25 minutes, or until the turkey bacon is crispy and the cheese is melted.

Add Blue Cheese: Remove from the oven and immediately sprinkle blue cheese crumbles over the hot bites. Let them sit for a few minutes to allow the cheese to soften.
