- 2 tablespoons olive oil
- 4 slices mozzarella cheese

- 4 Roma tomatoes, diced
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- ¼ cup fresh basil, chopped
- 1 tablespoon olive oil
- Salt and pepper, to taste
For Serving:
- Balsamic glaze, for drizzling

Prepare the Bruschetta Topping:
- In a bowl, mix diced tomatoes, garlic, shallot, basil, and 1 tablespoon olive oil.
- Season with salt and pepper, stir well, and set aside.

Cook the Chicken:
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken for 3-4 minutes per side until golden brown and fully cooked.
- Place a slice of mozzarella on each chicken breast, cover the skillet, and let the cheese melt.
