For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 slices mozzarella cheese

For the Bruschetta Topping:

  • 4 Roma tomatoes, diced
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • ¼ cup fresh basil, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For Serving:

 

  • Balsamic glaze, for drizzling

Instructions

 

  1. Prepare the Bruschetta Topping:

    • In a bowl, mix diced tomatoes, garlic, shallot, basil, and 1 tablespoon olive oil.
    • Season with salt and pepper, stir well, and set aside.
  2. Cook the Chicken:

    • Season chicken breasts with salt and pepper.
    • Heat olive oil in a skillet over medium-high heat.
    • Cook chicken for 3-4 minutes per side until golden brown and fully cooked.
    • Place a slice of mozzarella on each chicken breast, cover the skillet, and let the cheese melt.
  3. Assemble the Dish:

    • Top each chicken breast with a generous spoonful of the bruschetta mixture.
    • Drizzle with balsamic glaze before serving.
