Blueberry Peach Feta Salad with Lemon Basil Dressing – Fresh & Easy Recipe

  • 1 pint fresh blueberries

  • 2 ripe peaches, diced

  • 2 Persian cucumbers, sliced

  • ½ cup crumbled feta cheese

  • 3 tablespoons fresh lemon juice

  • 1 tablespoon Dijon mustard

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • 1 tablespoon finely chopped fresh basil

  • Salt and freshly ground black pepper to taste


Instructions

  • Prepare the Produce: Wash and dry the blueberries. Dice the peaches into bite-sized pieces. Slice the cucumbers into thin rounds.

  • Make the Dressing: In a small bowl, whisk together lemon juice, Dijon mustard, honey, and olive oil. Stir in chopped basil. Season with salt and pepper to taste.

  • Assemble the Salad: In a large bowl, combine the blueberries, diced peaches, sliced cucumbers, and crumbled feta cheese.
