Ingredients

4 large eggs

¼ cup crumbled blue cheese

2 tablespoons cooked, crumbled turkey bacon, plus extra for topping

2 tablespoons chopped fresh chives, plus extra for garnish

Freshly ground black pepper, to taste
Instructions

Preheat your oven to 400°F. Line a baking sheet with parchment paper.

Carefully separate the egg whites and yolks, placing the whites in a large mixing bowl and each yolk in its own small bowl.

Using an electric mixer, beat the egg whites until stiff peaks form.

Gently fold in the crumbled blue cheese and 2 tablespoons of turkey bacon into the whipped egg whites.

Spoon the egg white mixture into 4 mounds on the prepared baking sheet. Use the back of a spoon to create a deep well in the center of each mound.

Bake the mounds for 5 minutes.

Remove from the oven and carefully place one egg yolk into each well. Season with freshly ground black pepper.

Return to the oven and bake for an additional 2–3 minutes, or until the yolks are just set.

Garnish with extra crumbled turkey bacon and chopped chives. Serve immediately.
