Beef and Mushroom Casserole – Easy, Hearty, and Comforting Weeknight Dinner

  • 1 lb Ground Beef

  • 1 small Onion, chopped

  • 2 cups Mushrooms, sliced

  • 1 can (10.5 oz) Cream of Mushroom Soup

  • 1/2 cup Sour Cream

  • 1 cup Shredded Cheddar Cheese

  • 8 oz Egg Noodles

  • 1 tablespoon Olive Oil

  • Salt and Pepper to taste


Instructions

 

  1. Cook egg noodles according to package directions; drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add onion and mushrooms; sauté until soft.

  3. Add ground beef and cook until browned. Drain excess fat.

  4. Stir in cream of mushroom soup, sour cream, salt, and pepper. Cook 2 more minutes.

  5. Mix in cooked egg noodles and half of the cheese.

  6. Transfer mixture to a greased 9×13-inch baking dish.

  7. Sprinkle remaining cheese on top.

  8. Bake at 350°F for 20–25 minutes until hot and bubbly.
