Banana French Toast Roll-Ups – A Sweet & Crispy Breakfast Treat

  • 10 slices sandwich bread

  • 3 bananas, sliced thinly

  • 34 tablespoons butter, divided

  • 1 tablespoon sugar

  • 2 eggs

  • 3 tablespoons milk

  • 1/3 cup sugar

  • 1/21 teaspoon cinnamon

  • Powdered sugar (optional, for dusting)


Instructions

 

  1. Prepare the Banana Filling: In a non-stick pan over medium heat, melt about 1 to 1½ tablespoons of butter. Add the sliced bananas and 1 tablespoon of sugar. Sauté until golden. Remove from heat and set aside.

  2. Prepare the Bread: Remove the crusts from the bread slices. Flatten each slice with a rolling pin.

  3. Assemble the Roll-Ups: Place about 1-2 teaspoons of the banana mixture along one edge of each flattened bread slice. Brush the opposite edge with the egg mixture (prepared in the next step) to help seal the roll. Gently but tightly roll up the bread around the banana filling, pressing to seal.

  4. Prepare the Coatings: In one bowl, combine the remaining sugar with cinnamon and set aside. In another bowl, beat the eggs with milk.

  5. Cook the Roll-Ups: Heat a non-stick pan over medium heat and melt about 1 tablespoon of butter. Dip each roll-up in the egg mixture, ensuring all sides are coated, and place seam-side down in the pan. Cook 3-4 roll-ups at a time. When browned, turn a quarter turn and continue until all sides are cooked and browned nicely. Clean the pan slightly with a paper towel and repeat with remaining roll-ups, adding more butter as needed.

  6. Add Cinnamon-Sugar Coating: While still warm, roll the cooked roll-ups in the cinnamon-sugar mixture until evenly coated.

  7. Serve: Dust with powdered sugar if desired. Serve warm and enjoy!
