  • 2 cups old-fashioned rolled oats

  • 1 teaspoon baking powder

  • 1 1/2 teaspoons ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • 1 1/2 cups milk (dairy or non-dairy)

  • 2 large eggs

  • 1/4 cup pure maple syrup

  • 1/4 cup unsweetened applesauce

  • 1 teaspoon pure vanilla extract

  • 1 large apple, chopped (like Honeycrisp or Fuji)

  • Optional toppings: chopped nuts, extra apple slices, drizzle of maple syrup


Instructions

 

  1. Preheat your oven to 350°F. Lightly grease an 8×8-inch baking dish or line it with parchment paper.

  2. In a large bowl, stir together oats, baking powder, cinnamon, nutmeg, and salt.

  3. In another bowl, whisk together milk, eggs, maple syrup, applesauce, and vanilla extract until smooth.

  4. Pour the wet mixture into the dry ingredients and stir until fully combined.

  5. Fold in the chopped apple.

  6. Pour the mixture into the prepared baking dish and spread evenly.

  7. Bake for 35–40 minutes, until the top is golden and the oatmeal is set.

  8. Let cool for a few minutes before serving. Add your favorite toppings if desired.
