For the Lemon Basil Vinaigrette:

2 tablespoons lemon juice

1 tablespoon red wine vinegar

2 tablespoons chopped fresh basil

Instructions

Cook the Tortellini:

Bring a large pot of salted water to a boil.

Add the cheese tortellini and cook according to package instructions until al dente.

Drain and rinse under cold water to stop the cooking process.

Set aside to cool.

Prepare the Vinaigrette:

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, chopped basil, salt, and black pepper until well combined.

Assemble the Skewers:

On each wooden skewer, thread a combination of cooked tortellini, cherry tomatoes, artichoke hearts, mozzarella balls, black olives, cucumber slices, roasted red pepper strips, and fresh basil leaves.

Arrange the assembled skewers on a serving platter.
