Antipasto Tortellini Skewers with Lemon Basil Vinaigrette (Easy Party Appetizer)

Ingredients

  • 1 (9 oz) package cheese tortellini

  • 1 cup cherry tomatoes

  • 1 cup marinated artichoke hearts

  • 1 cup mozzarella balls

  • 1 cup sliced black olives

  • 1 cup sliced cucumber

  • 1/2 cup roasted red peppers, cut into strips

  • 1/4 cup fresh basil leaves

  • Wooden skewers

For the Lemon Basil Vinaigrette:

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons lemon juice

  • 1 tablespoon red wine vinegar

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, minced

  • 2 tablespoons chopped fresh basil

  • Salt and black pepper to taste


Instructions

 

  1. Cook the Tortellini:

    • Bring a large pot of salted water to a boil.

    • Add the cheese tortellini and cook according to package instructions until al dente.

    • Drain and rinse under cold water to stop the cooking process.

    • Set aside to cool.

  2. Prepare the Vinaigrette:

    • In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, chopped basil, salt, and black pepper until well combined.

  3. Assemble the Skewers:

    • On each wooden skewer, thread a combination of cooked tortellini, cherry tomatoes, artichoke hearts, mozzarella balls, black olives, cucumber slices, roasted red pepper strips, and fresh basil leaves.

    • Repeat until all ingredients are used.

  4. Drizzle with Vinaigrette:

    • Arrange the assembled skewers on a serving platter.

    • Drizzle the lemon basil vinaigrette over the skewers just before serving.
