  • 1 can Chickpeas (15 oz), drained and rinsed

  • 1 cup Cherry Tomatoes, halved

  • 1/2 Cucumber, diced

  • 1/4 cup Red Onion, chopped

  • 1/4 cup Kalamata Olives, sliced

  • 1/4 cup Feta Cheese, crumbled

  • 2 tablespoons Olive Oil

  • 1 tablespoon Lemon Juice

  • 1 teaspoon Dried Oregano

  • Salt and Pepper to taste


Instructions

 

  1. In a large bowl, mix chickpeas, tomatoes, cucumber, onion, olives, and feta.

  2. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.

  3. Pour dressing over salad and toss gently to combine.

  4. Store in containers for meal prep or serve fresh.
